Baking Without Tools: My Pizookie Adventure

I Didn’t Have a Mixer… or Measuring Spoons. So I Made a Pizookie Anyway.

“Confession time… I’m not a baker.”

Give me a pot of pasta, a holiday dinner, or a new recipe to throw together, and I’m in my element.

But baking?

Baking has always felt like chemistry class.

Everyone says you have to measure perfectly, don’t overmix, don’t undermix, soften the butter—but not too much—and somehow magic happens.

So naturally…

…I decided to make homemade chocolate chip cookies.

Except there was one tiny problem.

I don’t own a stand mixer.

Or even a hand mixer.

😂

So I grabbed my food processor, crossed my fingers, and hoped for the best.

Then I realized…

I also don’t own half of the measuring spoons or cups the recipe called for.

At one point I was literally standing in my kitchen doing math like…

“Okay… if I use this ¼ cup three times, that’s the same as ¾ cup… right?”

And don’t even get me started on the teaspoons.

I had a tablespoon…

A half tablespoon…

And a dream.

🤣

So there I was, eyeballing fractions, Googling conversions, and hoping I wasn’t about to create chocolate chip soup instead of cookie dough.

Somehow…

It all worked.

Like…

It REALLY worked.

The dough came together beautifully, the cookies baked perfectly, and then I had one of those dangerous ideas…

“What if I turned this into a Pizookie?”

If you’ve ever been to BJ’s Restaurant, you already know.

A giant warm chocolate chip cookie baked in a skillet until the edges are golden, the center stays soft and gooey, topped with a giant scoop of vanilla ice cream.

So that’s exactly what I did.

And let me tell you…

It disappeared embarrassingly fast.

The best part?

This recipe is beginner-friendly, doesn’t require fancy baking equipment, and apparently doesn’t even require a complete set of measuring spoons. 😂

If you’ve been putting off baking because you don’t have all the “right” tools, let this be your reminder that sometimes you’ve just got to make what you’ve got work.

Because if this chef can make a Pizookie with a food processor, a random assortment of measuring cups, and a little kitchen math…

Easy Homemade Chocolate Chip Pizookie

Prep Time: 15 minutes
Bake Time: 20–25 minutes
Serves: 8–10

Ingredients

  • 1 cup butter
  • ¾ cup sugar
  • ¾ cup brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2¼ cups flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 cups chocolate chips
  • Vanilla ice cream

Directions

  1. Preheat oven to 350°F.
  2. Cream butter and sugars.
  3. Mix in eggs and vanilla.
  4. Add flour, baking soda, and salt.
  5. Fold in chocolate chips.
  6. Spread dough into a buttered skillet.
  7. Bake 20–25 minutes.
  8. Cool for 10 minutes.
  9. Top with vanilla ice cream and enjoy!

Funny enough, this post was never really about cookies.

It started because I wanted something warm and cozy on a Sunday evening.

Then it became a lesson in making do with what I had.

No stand mixer.

No complete measuring spoon set.

Just a food processor, a random collection of measuring cups, a half tablespoon…and a willingness to try anyway.

Somewhere between doing kitchen math and hoping I wasn’t accidentally inventing a new dessert, I realized how often we wait.

We wait until we have the perfect tools.

The perfect timing.

The perfect confidence.

The perfect plan.

But life rarely hands us “perfect.”

Sometimes all we have is enough.

Enough ingredients.

Enough courage.

Enough curiosity to try.

And maybe that’s all we ever really needed.

These cookies reminded me that creativity often grows in the middle of imperfection.

So if you’ve been waiting to start something…

Bake the cookies.

Write the blog.

Take the class.

Plant the garden.

Start the business.

Use the camera you already own.

Create with what you have.

You might surprise yourself.
